The history of Kellogg cornflakes

Dr. John Harvey Kellogg, a surgeon, proponent of dietary reform and health fanatic, have his name to a major force in the U.S cereal industry.

In 1877, Kellogg created breakfast cereal called granola, but not until his invention of corn flakes did cereal become a commercial success. At first, most cereals were marketed as pure, whole-grain foods.

In 1894 Kellogg created the first flaked cereal, Granose. During the 1890s Dr Kellogg had given his business-minded brother William Keith Kellogg, increased authority over his food interest. In 1898, the brothers applied the Granose flaking method to maize instead of wheat, thus inventing the corn flake. They called it Sanitas Toasted Corn Flakes.

The original version were at first thick, tasteless and turned rancid in the box, and do not sell well; until they decided to flake hulled corn with commercial rollers. It took several years to make an appropriately crispy corn flake.

In 1902 William Keith Kellogg added with salted and sugared brewer’s malt to corn flakes it improve flavor. The advertising Sanitas Toasted Corn Flakes on large scale beginning in the fall 1906.
